Ingredients
For the Bhalla
- 1 cup urad dal black gram lentils
- 2 tablespoons moong dal split yellow lentils
- 1 teaspoon cumin seeds
- 2 green chilies finely chopped
- 1- inch piece of ginger grated
- Salt to taste
- Oil for frying
For the Yogurt Mixture
- 2 cups thick yogurt
- 1/2 cup water
- Salt to taste
- 1 teaspoon roasted cumin powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon chaat masala
For Serving
- Tamarind chutney
- Green chutney
- Fresh coriander leaves chopped
- Sev crunchy chickpea flour noodles
- Pomegranate seeds optional
Instructions
Preparing the Bhalla:
- Rinse urad dal and moong dal under cold water until the water runs clear. Soak them together in enough water for at least 4 hours or overnight.
- Drain the soaked lentils and transfer them to a blender or food processor. Add green chilies, grated ginger, cumin seeds, and salt. Blend into a smooth batter, adding a little water if needed to facilitate blending.
- Heat oil in a deep frying pan or kadhai over medium heat. Once the oil is hot, drop spoonfuls of the batter into the oil and fry until golden brown and crispy.
- Remove the fried bhallas from the oil and drain them on paper towels to remove excess oil. Let them cool slightly.
Preparing the Yogurt Mixture:
- In a large bowl, whisk together thick yogurt, water, salt, roasted cumin powder, red chili powder, and chaat masala until smooth and creamy. Adjust seasoning according to taste.
Assembling the Dahi Bhalla:
- Take the fried bhallas and gently press them between your palms to remove excess oil. Place them in a bowl of lukewarm water and let them soak for about 10-15 minutes.
- Squeeze the soaked bhallas gently between your palms to remove excess water and transfer them to a serving plate.
- Pour the prepared yogurt mixture over the bhallas, ensuring they are completely submerged. Allow them to soak for at least 30 minutes to absorb the flavors of the yogurt.
Serving the Dahi Bhalla:
- Once the bhallas have soaked up the yogurt, drizzle them with tamarind chutney and green chutney according to taste.
- Garnish with chopped coriander leaves, sev, and pomegranate seeds, if using.
