Ingredients
For Patties
- 300 gm potatoes
- 1 carrot
- 40 grams French beans
- ½ cup peas
- ½ cup finely chopped onion
- 1 tsp chopped garlic
- 2 tsp chopped ginger
- 1 tsp chopped green chilies
- 2 tbsp chopped coriander leaves
- ½ tsp Coriander Powder
- ½ tsp cumin powder
- ½ tsp red chili powder
- ½ tsp Garam Masala
- ⅛ tsp turmeric powder
- 5 to 6 tbsp bread crumbs
- salt as required
- 4 to 6 tbsp of oil
For Batter
- 3 tbsp maize flour or corn flour
- 3 tbsp Rice Flour or All purpose flour
- 2 tbsp gram flour besan or chickpea flour
- ½ cup water
For Breading
- ½ cup bread crumbs or crushed oats semolina or corn flakes
For Burger Toppings
- 1 tomato medium size – thinly sliced
- 1 cucumber medium size – thinly sliced
- 1 onion medium size – thinly sliced
- 4 to 5 lettuce leaves – rinsed drained and chopped
- 1 tbsp Butter or oil for roasting buns
- 4 whole wheat burger buns – whole wheat or plain or multi grain
For Mayo Dressing
- 3 tbsp Vegan Eggless Mayonnaise or vegan mayonnaise
- ½ tsp mustard seeds – crushed or powdered in a small spice grinder or mortar-pestle
- ½ tsp crushed black pepper
- ¼ tsp sugar or add as required
- 2 to 3 pinches of salt
- 1 tbsp lemon juice or add as required
- ½ tsp apple cider vinegar or white vinegar
- 1 tbsp extra virgin olive oil or olive oil
Instructions
Procedure
Preparing Breadcrumbs
- Break 6-7 slices of bread into pieces and grind to a semi-fine consistency.
- Transfer breadcrumbs to a plate and set aside.
Preparing Veggies
- Steam or boil 3 medium to large potatoes, 1 medium carrot, 8-9 French beans, and ⅓ cup of peas until cooked.
- Mash potatoes (approx. 3 cups mashed) and chop carrots (1 cup chopped), beans (1 cup chopped), and peas.
- Mix mashed potatoes with chopped veggies.
Making Vegetable Patty Mixture
- Sauté 1 teaspoon of ginger-garlic-green-chili paste and chopped onions (2 medium) in oil.
- Add 1 teaspoon coriander powder, 1 teaspoon cumin powder, 1 teaspoon garam masala powder, 1 teaspoon red chili powder or cayenne pepper, and ½ teaspoon turmeric powder.
- Mix well and add 2 tablespoons chopped coriander leaves or parsley.
- Add salt to taste and ½ cup breadcrumbs. Mix well.
Preparing Mayo Dressing And Toppings
- Mix ½ cup mayonnaise with 1 teaspoon ground mustard seed, ½ teaspoon freshly crushed black pepper, 1 teaspoon lemon juice, 1 teaspoon apple cider vinegar or white vinegar, 1 tablespoon extra virgin olive oil or olive oil, 1 teaspoon sugar, and salt to taste.
- Chop 1 onion, 1 tomato, 1 cucumber, and 4-5 small lettuce leaves or cabbage leaves.
Making Batter
- Mix ½ cup maize flour, 2 tablespoons polenta or cornmeal, 2 tablespoons rice flour, and 2 tablespoons chickpea flour or gram flour with water until smooth.
Wok Frying Patties
- Heat 2-3 tablespoons of oil in a Wok for Wok-frying the patties.
- Dip each patty in batter, coat with breadcrumbs, and fry until golden brown.
Assembling Veggie Burger
- Toast 4 burger buns with butter.
- Spread mayo dressing on buns and place veggie patty, onion, tomato, cucumber, and lettuce.
