Ingredients
  

  • 6 to 7 garlic cloves
  • 1 inch of ginger peeled
  • 2 to 3 green chilly
  • Salt
  • Oil
  • Cumin seeds
  • 2 medium-sized onions
  • 3 tbsp ghee
  • 1 ½ tbsp of coriander powder
  • ½ tbsp of turmeric
  • 1 tsp Kashmiri red chillies
  • 2 medium size Tomato chopped
  • 1 medium size Carrot diced
  • 2 tbsp fresh Green peas
  • cup Mushroom chopped
  • ½ cup Cauliflower chopped
  • ¼ cup Water
  • 10-15 French beans roughly chopped
  • 50 gm Paneer cut into small cube
  • 1 tsp kasuri methi
  • 1 tbsp of butter
  • 20 gm grated paneer
  • Fresh coriander/ dhaniya

Instructions
 

How to make ginger garlic paste.

  • Take a grinder and add ginger, garlic, green chilli and a little salt.
  • And grind it till a smooth paste.

How to make Dhaba style Mix Veg.

  • In a shallow wok (kadai), add 2 tbsp of oil once it’s hot, add cumin seeds and stir fry it till they make a popping sound.
  • Add prepared ginger garlic paste into the wok and saute it well.
  • Add onions and fry them on high flame,
  • Add 1 tsp of ghee and saute it for a few seconds.
  • Fry the onions till they turn golden brown
  • Now add coriander powder, and turmeric powder and saute it for a minute.
  • Now, add Kashmiri red chilli powder, and tomatoes and saute it well.
  • After the masala is cooked, add 1 cup of water and cook it for 5 minutes.
  • Now, add carrots and saute, once the carrots are cooked, add green peas, mushroom, french beans, cauliflower, and 1 cup water and mix all the veggies well, cover it with the lid and let it cook for 8 to 10 minutes.
  • Add paneer, ½ tsp of kasuri methi, 1 tbsp of butter and mix it well.
  • After the vegetables are cooked properly. Transfer it to a serving dish.
  • Garnish with the grated paneer, kasuri methi and fresh coriander/dhaniya patta.
