- 2 cups cooked jasmine rice day-old rice works well
- 1 cup kimchi chopped
- 1/2 cup kimchi juice
- 1 cup diced cooked chicken pork, or tofu (optional)
- 1/2 cup frozen peas and carrots
- 3 green onions chopped
- 2 cloves garlic minced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 fried egg per serving optional, for topping
Cook the jasmine rice and let it cool. Chop the kimchi and green onions.
In a large pan or wok, heat vegetable oil over medium-high heat. Add the diced chicken, pork, or tofu and cook until browned and cooked through. Remove from the pan and set aside.
In the same pan, add a bit more oil if needed. Add minced garlic and sauté for about 30 seconds until fragrant. Add frozen peas and carrots and stir-fry until they are heated through.
Add chopped kimchi to the pan and stir-fry for another 2-3 minutes.
Add the cooked jasmine rice to the pan. Break up any clumps and mix well with the vegetables and kimchi.
Pour in the kimchi juice, soy sauce, and sesame oil. Stir everything together until well combined. If you're using cooked protein, add it back to the pan and mix.
Add chopped green onions to the fried rice and give it a final stir.
Top each serving with a fried egg.
Garnish with extra green onions or sesame seeds if desired.
