Ingredients
  

  • 400 gm of Chickpeas/Chole soaked overnight
  • 2 onion chopped
  • 1 tomato chopped
  • 1 inch piece of fresh ginger peeled and chopped
  • 4 cloves garlic chopped
  • 2 green chillies chopped
  • 3 tablespoons of olive oil
  • 2 fresh bay leaves
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • ½ tsp turmeric powder
  • Salt to taste
  • water as needed
  • 1 teaspoon fresh cilantro/Dhaniya leaves for garnish, or more to taste

Instructions
 

How to make Chole Masala

  • Take a bowl wash chickpeas/chole and soak it under sufficient water for the whole night.
  • Take a pressure cooker pour your soaked chickpeas/Chole and boil till 4 to 5 whistles.
  • Take a grinder and put onion, tomato, ginger, garlic and Green chilli and grind them to make a smooth paste.
  • Heat oil in a deep wok over medium heat.
  • Stir Fry bay leaves in hot oil, for about 30 seconds.
  • Pour the grinded paste into the Wok and cook until the oil begins to separate from the mixture cook for 3 minutes.
  • Now add spices Red chili powder, coriander, gram masala, turmeric, and salt to taste.
  • Cook for 3 to 4 minutes.
  • Now add enough water to make perfect thick gravy and boil the gravy till all the masalas get mixed and cooked well.
  • Now turn off the gas.
  • Now Garnish with Fresh Cilantro/Dhaniya patta.
  • Kudos!!! Your Chole Masala is now ready to serve.
